Over the past few days our rust-ravaged garlic has started developing flower buds on the ends of tall, curly stalks. I googled to find out if they should be cut off or not* and the first thing I learnt was they’re called ‘scapes’. The second thing I learnt was they’re edible.
Americans in particular seem to have cottoned on to this bonus foodstuff and recommend either chucking them in a stir fry or pickling them. Pickled scapes it is then.
*Opinion is divided, although most folk chop them off. Just as well if they’re going to be pickled.
Any good? I usually make a pesto with mine, damn good stuff and no worries about vampires for about week!
